Egmont Key

Located at the mouth of Tampa Bay, southwest of Fort DeSoto Beach, Egmont Key is primarily a wildlife refuge. It’s a place to relax and collect shells along secluded pristine beaches. Accessible only by private boat, Egmont Key has a unique natural and cultural history, including a lighthouse that has stood since 1858. During the 19th century, the island served as a camp for captured Seminoles at the end of the Third Seminole War and was later occupied by the Union Navy during the Civil War. In 1898, as the Spanish - American War threatened, Fort Dade was built on the island and remained active until 1923. After touring the historic sites and trails, visitors can enjoy swimming, fishing, wildlife viewing, and picnicking.

Museum of Science and Industry

The 2013 Shark Week Kickoff at MOSI will take place on Saturday, August 3 from 10 a.m. to 3 p.m. Head out to MOSI for a celebration of all things sharks featuring shark-related games, hands-on activities, and the opportunity to see the inner workings of sharks with MOSI's featured exhibit Sea Monsters Revealed.  Dr. Daniel Huber, shark expert, consultant for Discovery Channel, and University of Tampa professor will be on hand to speak about some of the myths and mysteries associated with these fascinating creatures.

Perseid Meteor Shower

Every year in August, Earth passes through a cloud of dust released off the Comet Swift-Tuttle.  Then, Perseid meteoroids will hit our atmosphere at break-neck speeds. This produces the annual light show that is a favorite of many sky watchers. The best viewing will be on August 12 and 13.  So, grab a comfortable lawn chair, maybe a blanket, and find a location away from the city lights to see the best show.  This year, experts are saying the shower could produce as many as 100 viewings per hour.

Easy Mexican Rice Recipe

Making delicious Mexican rice is a snap when you have a great recipe.  Here’s an easy recipe that works as a nice side dish. Grill or sauté slices of beef, chicken, or fish….make a few tacos, add a side of refried beans and you have a tasty meal!

Hint: This can easily be made in a rice cooker.  You still want to brown the rice on the stove. When it’s time to add the tomato sauce, broth and cilantro, you’ll then place all the ingredients into the rice cooker and cook as you would normally do for steamed rice.

Ingredients

• 3 Tbsp. vegetable oil
• 1 cup long grain rice, uncooked
• 1 tsp. fresh minced garlic
• 1/2 tsp. kosher salt
• 1/2 tsp. cumin
• 1/2 c. tomato sauce
• 1 (14 oz) can chicken broth or stock
• 3 Tbsp. finely chopped fresh cilantro

• Heat oil in a large saucepan over medium heat. Add the rice and gently stir until rice begins to lightly brown. Add the garlic, salt, and cumin and stir the rice until it looks golden. Add the tomato sauce, chicken broth, and cilantro and turn the heat up to medium high. Bring the mix to a boil then turn the heat to low and cover the pan with a lid. Simmer for 20 to 25 minutes. Remove from heat and fluff with a fork. Serves 4.
